ALL STEAMED UP ARTICHOKES

Ingredients
4 each artichokes, large
1 each lemon, cut into quarters

Method
1. Slice about 1” from the artichoke tops and trim the stems. Remove the smaller outer leaves located at the bottom of the artichoke and trim any hard, spiky points with scissors. Be careful as the thorns can cause injury.
2. Using a steam pan system where one pan holds the water and another pan with holes is placed on top of pan holding water. Put about 2 inches of water in the bottom pan and bring to a boil. Once the steam starts to rise, place other pan with holes over pan holding water.
3. Place the artichokes in pan with holes and steam about 25 to 30 minutes, until the bottom is tender and the outer leaves can be pulled off easily.
4. Remove the artichokes from the pan and place them immediately into a large bowl with ice water.
5. Drain and refrigerate until serving time.
6. Place one whole artichoke on 4 chilled plates and serve with a lemon wedge on the side of the plate.

You may use a dip such as Fat-Free Italian dressing or the curry dip from the Asparagus recipe.

Yield: 4 servings – 1 artichoke per person
