FRESNO BEEF STIR-FRY

Ingredients
12 oz round, eye/tip
1 tbsp minced garlic
¼ cup soy sauce
½ cup water
2 tbsp Splenda brown sugar
½ cup fresh snow peas or sugar snaps
½ cup sliced onion
1 cup chopped bok choy
1 tbsp cornstarch
non-fat cooking spray
salt and pepper

Method
1. Slice beef round into thin strips about 1/8-inch wide and 3 inches long (partially frozen meat is easier to slice).
2. Spray wok or large skillet with non-fat spray and heat on high heat. Sauté garlic.
3. Add beef strips and stir-fry turning pieces constantly until beef is no longer red (about 3 – 4 minutes). Remove beef from pan and set aside.
4. Add soy sauce, brown sugar and ¼ cup of water together in a cup mix and then add to wok or skillet. Add vegetables and cook until they are tender-crisp (3-4 minutes).
5. Mix cornstarch and remaining water in a bowl until smooth. Push vegetables aside and add cornstarch mixture to wok/skillet stirring constantly.
6. Cook until thickened, add beef back to wok/skillet and coat both beef and vegetables with sauce. Serve immediately.

Yield: 4 servings – 4 oz per person
