APPLE OF MY EYE PORK STIR-FRY
Ingredients
2 tbsp apricot jam, all fruit preferred
2 tbsp soy sauce
2 tbsp water
½ tsp cornstarch
1 tbsp fresh garlic, minced
1 tbsp fresh ginger, minced
12 oz pork tenderloin, cut into thin strips
1 cup red bell pepper
1 cup yellow bell pepper
1 cup snow peas
1 can – 8 oz water chestnuts, sliced, rinsed and drained
2 each firm apples, Gala or Fuji, cut into 1-inch pieces
½ cup scallions, thinly sliced
black pepper
non-fat cooking spray
Method
1. In a small bowl, combine jam, soy sauce, water and cornstarch. Set aside.
2. Spray a large non-stick skillet with non-fat cooking spray and heat over medium high heat.
3. Add garlic and ginger and sauté till you start to smell their aromas. Add pork and stir-fry until pork is browned and just cooked through, about 3-5 minutes.
4. Transfer pork to a bowl and cover.
5. Spray skillet again with non-fat cooking spray. Stir-fry peppers, snow peas, water chestnuts, and apples until peppers are crisp tender, about 4-5 minutes.
6. Add pork back to skillet along with scallions. Stir-fry 30 seconds.
7. Stir jam mixture to recombine, then blend into stir-fry making sure to stir constantly as sauce will thick fast in about 30 seconds to one minute, season with black pepper.
Serve immediately. Serve over brown rice or whole-wheat pasta.
