SWEET AND SPICE TURKEY PINWHEELS

Ingredients
4 oz fat-free cream cheese, softened
1/3 cup Mandarin oranges, chopped and drained
1 tbsp cumin
salt and pepper
4 each 10-inch fat-free flour tortillas
¼ cup green onions, green part only, chopped small
6 oz Low-fat or fat-free smoked turkey, thinly sliced
½ cup medium spinach leaves, washed and stemmed (around 25 leaves)

Method
1. In medium bowl, mix cream cheese, oranges and cumin, season with salt and pepper.
2. Lay out the flour tortillas and spread cream cheese mix, making sure to leave about a 1 to 2 inch strip around edges free of toppings.
3. Sprinkle with green onions, then layer with turkey and spinach leaves.
4. Roll tortillas tightly.
5. Slice ends off and discard, then slice each tortilla in 6 pieces and lay on their sides.

You can make these in advance, but if cutting pinwheels, do not refrigerate more than 8 hours before eating.

Yield: 24 individual pinwheels – 4 per person
