WILD MUSHROOM CROSTINI
Ingredients
1 each French bread baguette
2 each shallots, chopped small dice
8 oz cremini mushrooms, sliced
4 oz shiitake mushrooms, sliced
¼ cup fat-free cream cheese, softened at room temperature
1 tbsp fresh thyme
salt and pepper
non-fat cooking spray
Method
1. Preheat oven to 250 degrees.
2. Cut the loaf of French bread into 16 slices on the diagonal. Arrange the bread on a baking sheet and toast in the oven until golden brown. Remove from the oven. Set aside.
3. Spray large skillet with non-fat cooking spray and heat on medium; add shallots and sauté until tender.
4. Add mushrooms to skillet and sauté until moist and tender.
5. Place mushroom sauté into food processor and pulse until mushrooms are finely chopped. Set aside.
6. In a medium bowl add cream cheese, thyme, mushrooms and mix until blended. Season to taste with salt and pepper.
7. Spread mushroom mixture onto crostini and serve.
(The spread keeps up to 3 days tightly covered in the refrigerator. When ready to use again bring spread to room temperature and serve.)
Yield: 16 servings – 1 slice with 2 tablespoons spread
